Blueberry-Coconut-Streusel Muffins

Happy Weekend everyone!!

These cake-like muffins were a huge hit with my family! Blueberries and coconut with a hint of vanilla…amazing!

This was mostly a surprise for my son who had a small surgery on his hand this week. I have been very proud of him because he was very brave!

  1. P.S. — I was intrigued by your blog name– I could almost say the same. My maternal grandmother’s family immigrated from Wales, through Canada. And my paternal grandmother’s family immigrated from Switzerland. And we all ended up in California. Fun to find your blog!!

  2. I wish every baked good included streusel, it is honestly one of the best things ever! That’s why I love German pastries and cakes so much. Streusel heaven! This flavor combo sounds insanely good, I’ve never thought about mixing blueberries with coconut, but it sounds fantastic.
