Gingerbread Brownies

This morning I started decorating our House for Christmas season, hanging lights on the windows and bringing out Candles…I know I am probably late compared to most people. I saw lots of decorated Christmas trees in November already, I just did not feel like it. But now it is December and I am getting in to the spirit.

I just love the smell of spices, especially cinnamon. I actually use cinnamon every day all year! A little sprinkle in my muesli, tea, coffee…It is such an amazing healthy spice.

What better way to ring in the holiday season, then with some gingerbread smell in the air:-)

Gingerbread Brownie

  • 1/4cup        butter
  • 1cup            dark chocolate, chopped, or bittersweet choc. chips
  • 1/3cup        molasses
  • 1 1/4cup     brown sugar, (I used only 1 cup)
  • 2 large       eggs
  • 1cup           unbleached flour, (I used spelt flour)
  • 1/2tsp        salt
  • 1tsp            cinnamon
  • 1tsp            ginger, I used freshly grated

-Preheat oven to 350F/180C. Grease a 9×9 inch baking dish (or line with parchment paper).

-Melt butter and chocolate, remove from heat.

-In a bowl whisk molasses and sugar, add eggs one at a time. Whisk in butter and chocolate.

-Add flour, salt, cinnamon and ginger until just incorporated.

-Pour in prepared dish. Bake for 20-30 minutes.

-Let cool in pan. Cut into squares and dust with some icing sugar.
